Ingredients

  • 2 pieces vegan chicken fillets
  • 4 slices vegan bacon slices
  • 4 slices whole grain sandwich bread
  • 1 medium ripe avocado
  • 1 large tomato
  • 4 leaves lettuce leaves
  • 4 tablespoons vegan mayonnaise
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Heat one tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the vegan chicken fillets to the skillet and cook for 5-7 minutes on each side until golden brown and heated through. Remove from the skillet and set aside.

Step 3

In the same skillet, add another tablespoon of olive oil. Add the vegan bacon slices and cook for 3-4 minutes on each side until crispy. Remove and set aside.

While the vegan chicken and bacon are cooking, slice the tomato into thick slices and slice the avocado.

Toast the sandwich bread slices in a toaster or on a griddle until golden.
