Ingredients

  • 150 grams Rolled oats
  • 100 grams All-purpose flour
  • 100 grams Brown sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 80 grams Vegan butter
  • 60 ml Non-dairy milk
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Flaxseed meal
  • 3 tablespoons Water
  • 50 grams Raisins or chocolate chips

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a small bowl, mix the flaxseed meal with water and set aside for about 5 minutes to thicken.

Step 3

In a large mixing bowl, whisk together the rolled oats, all-purpose flour, brown sugar, baking powder, cinnamon, and salt.

Step 4

In another bowl, melt the vegan butter over low heat or in the microwave. Let it cool slightly, then stir in the non-dairy milk, vanilla extract, and the flaxseed mixture.

Step 5

Pour the wet ingredients into the dry ingredients and mix until combined. If the mixture seems too dry, add a little more non-dairy milk, one tablespoon at a time.

Step 6

Fold in the raisins or chocolate chips evenly throughout the dough.

Step 7

Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Step 8

Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden but the centers are still soft to touch.

Step 9

Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy your vegan chewy oat cookies with a cup of tea or coffee!
