Ingredients

  • 2 cups rolled oats
  • 0.5 cup almond butter
  • 0.5 cup maple syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds
  • 0.25 cup sunflower seeds
  • 0.25 cup pumpkin seeds
  • 0.5 cup dried cranberries
  • 0.5 cup dried apricots, chopped
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

Step 2

In a small saucepan over low heat, combine the almond butter, maple syrup, and coconut oil. Stir frequently until the mixture is smooth and well combined.

Step 3

Remove the saucepan from the heat and add the vanilla extract. Stir to incorporate.

Step 4

In a large mixing bowl, combine the rolled oats, chia seeds, sunflower seeds, pumpkin seeds, dried cranberries, dried apricots, ground cinnamon, and salt.

Step 5

Pour the warm almond butter mixture over the dry ingredients in the mixing bowl. Use a spatula to mix everything together until all the dry ingredients are evenly coated and mixed.

Step 6

Transfer the mixture into the prepared baking pan. Press the mixture evenly and firmly into the pan using the back of the spatula to compact it as much as possible.

Step 7

Bake in the preheated oven for 15-18 minutes or until the edges are golden brown.

Step 8

Remove from the oven and allow to cool completely in the pan. This may take about 1 hour.

Step 9

Once cooled, remove from the pan using the parchment paper and cut into 12 bars. Store in an airtight container at room temperature for up to a week.
