  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 cup nutritional yeast

  • 1 cup cashews

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh chives
  • 2 cups spinach

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and dry the potatoes. Rub them with 1 tablespoon of olive oil and place them directly on the oven rack.
