Ingredients

  • 500 grams fresh spinach
  • 240 ml unsweetened almond milk
  • 60 grams nutritional yeast
  • 45 grams tahini
  • 30 grams cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 150 grams cherry tomatoes
  • 60 grams breadcrumbs

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Rinse and roughly chop the fresh spinach.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the spinach and sauté until wilted, approximately 3-5 minutes. Remove from heat and set aside.

Step 4

In a medium saucepan, combine the almond milk, nutritional yeast, tahini, cornstarch, garlic powder, onion powder, lemon juice, salt, and black pepper.

Step 5

Whisk the mixture continuously over medium heat until the sauce thickens and becomes creamy. This should take about 5-7 minutes.

Step 6

Once the sauce has thickened, remove it from the heat.

Step 7

Combine the wilted spinach with the cheesy sauce, ensuring all spinach is well coated.

Step 8

Transfer the spinach mixture into a greased baking dish.

Step 9

Halve the cherry tomatoes and spread them evenly over the spinach mixture in the baking dish.

Step 10

Sprinkle the breadcrumbs evenly over the top to create a crust.

Step 11

Bake in the preheated oven for 20-25 minutes until the top is golden and the bake is heated through.

Step 12

Allow to cool slightly before serving to allow the flavors to meld together.
