  • 4 large Russet potatoes
  • 1 cup Cashews
  • 0.333 cup Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 medium Carrot
  • 1 cup Water
  • 1 cup Unsweetened almond milk
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chives

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and slice the russet potatoes into 1/4-inch thick rounds and set aside in a large bowl.

Step 3

In a small pot, boil 1 cup of water and add 1 medium carrot (chopped) and 1 cup of cashews. Cook for 10 minutes, until the carrot is tender.

Drain the cashews and carrot, then transfer them to a high-speed blender. Add nutritional yeast, lemon juice, garlic powder, onion powder, paprika, salt, olive oil, and almond milk. Blend until completely smooth and creamy. Add additional almond milk if needed to reach a pourable consistency.
