  • 150 grams Cherry tomatoes, halved
  • 100 grams Spinach leaves

Directions

Step 1

Begin by soaking the raw cashews in hot water for at least 15 minutes to soften them.

Step 2

While the cashews are soaking, bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Drain the pasta and set aside.
