Ingredients

  • 400 grams Pasta (penne or fusilli, gluten-free if desired)

  • 3 cloves Garlic, minced
  • 2 tablespoons All-purpose flour
  • 2 cups Unsweetened almond milk
  • 1 cup Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Vegan mozzarella cheese, shredded
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Preheat your oven to 180°C (350°F).

Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.

In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
