Ingredients

  • 2 medium aubergines (eggplants)
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.5 cup nutritional yeast
  • 1 cup unsweetened almond milk
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • 0.5 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Slice the aubergines into ½-inch thick rounds.

Step 3

Lay the aubergine slices on a baking sheet lined with parchment paper. Brush both sides with olive oil and season with salt and pepper.

Step 4

Bake the aubergine slices in the preheated oven for 25 minutes, flipping halfway through, until they are golden and tender.

Step 5

While the aubergines are baking, prepare the vegan cheesy sauce. In a saucepan over medium heat, combine the nutritional yeast, almond milk, cornstarch, garlic powder, onion powder, smoked paprika, lemon juice, and a pinch of salt.

Step 6

Whisk constantly until the mixture thickens, forming a creamy sauce. This should take about 5 minutes. Remove from heat.

Step 7

Once the aubergines are done, remove them from the oven and pour the cheesy sauce evenly over the top.

Step 8

Sprinkle the breadcrumbs over the cheesy aubergine slices.

Step 9

Return the baking sheet to the oven and bake for another 15 minutes until the top is golden and slightly crispy.

Step 10

Remove from the oven and let it cool for a few minutes before serving.

Step 11

Garnish the baked aubergine with chopped fresh parsley and serve warm.
