Ingredients

  • 2 sheets Vegan puff pastry sheets
  • 2 medium Potatoes
  • 1 medium Carrot
  • 0.5 cup Frozen peas
  • 1 cup Vegan cheese
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ginger
  • 2 cloves Garlic
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 small Green chili
  • 2 tablespoons Fresh coriander
  • 2 tablespoons Oil for cooking
  • 2 tablespoons Water
  • 2 cups Oil for frying

Directions

Step 1

Peel and dice the potatoes and carrot into small cubes.

Step 2

In a pot, boil the diced potatoes and carrot for about 10 minutes until tender. Drain and set aside.

Step 3

Heat 2 tablespoons of oil in a pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds.

Step 4

Add finely chopped ginger and garlic, and sauté for another minute.

Step 5

Add turmeric powder, coriander powder, salt, and black pepper, and stir well.

Step 6

Add the boiled potatoes, carrot, and frozen peas to the pan. Mix to combine with the spices.

Step 7

Mash the vegetables slightly with a spoon and cook for another 5 minutes.

Step 8

Add the chopped green chili, garam masala, and freshly chopped coriander. Mix well and cook for 2-3 minutes.

Step 9

Remove from heat and let the mixture cool to room temperature.

Step 10

Preheat the oil for frying to 350°F (175°C).

Take the vegan puff pastry sheets and cut them into 4 x 5-inch rectangles.

Step 12

Place a tablespoon of filling in the center of each pastry rectangle, top with a sprinkle of vegan cheese.

Step 13

Brush the edges of the pastry with water, fold over to form a triangle, and press the edges to seal.

Step 14

Fry the samosas in batches until golden brown and crispy, about 3-4 minutes per side.

Step 15

Remove from oil and drain on paper towels.

Step 16

Serve hot with your favorite dipping sauce.
