  • 1 cup All-purpose flour
  • 1.5 cups Unsweetened almond milk

  • 1 tablespoon Maple syrup

  • 8 ounces Firm tofu
  • 0.5 cup Cashews, soaked and drained
  • 2 tablespoons Lemon juice
  • 2 tablespoons Nutritional yeast
  • 0.25 cup Dairy-free cream cheese
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Lemon zest
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Coconut oil or vegan butter, for cooking

Directions

Step 1

In a medium bowl, whisk together the flour, almond milk, aquafaba, maple syrup, vanilla extract, and salt until smooth and lump-free to create the crepe batter. Set aside for 15 minutes.

Step 2

To prepare the filling, crumble the firm tofu into a food processor. Add in the soaked cashews, lemon juice, nutritional yeast, dairy-free cream cheese, powdered sugar, and lemon zest. Blend until smooth and creamy.

Heat a non-stick skillet over medium heat and lightly coat with coconut oil or vegan butter.
