  • 1 medium head Cauliflower, riced
  • 2 tablespoons Ground flaxseed
  • 5 tablespoons Water
  • 1.5 cups Almond flour
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 1 cup Tomato sauce
  • 1 cup Vegan mozzarella cheese, shredded
  • 1 cup Bell peppers, sliced
  • 0.5 cup Red onion, sliced
  • 0.25 cup Black olives, sliced
  • 0.25 cup Fresh basil leaves
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, combine the ground flaxseed and water, and set aside for 5 minutes to thicken. This will act as your vegan egg replacement.

Step 3

While waiting, rice the cauliflower by breaking it into florets and pulsing in a food processor until it resembles rice. Alternatively, use store-bought riced cauliflower.

Step 4

Transfer the riced cauliflower into a microwavable bowl and microwave for 5-7 minutes until soft. Let it cool slightly.

Once cool enough to handle, place the cauliflower in a clean kitchen towel. Wrap it up and squeeze out as much moisture as possible. This step is crucial for a firm crust.
