  • 0.5 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 0.5 cup Bell pepper, sliced
  • 0.25 cup Fresh basil leaves
  • 0.5 teaspoon Crushed red pepper flakes

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Break the cauliflower into small florets and pulse in a food processor until it resembles rice.

Transfer the cauliflower rice to a microwave-safe bowl and microwave for 5-6 minutes until softened.
