Ingredients

  • 240 ml Unsweetened almond milk
  • 7 g Active dry yeast
  • 50 g Granulated sugar
  • 75 g Vegan butter
  • 500 g All-purpose flour
  • 1 tbsp Ground cardamom
  • 1 tsp Salt
  • 100 g Brown sugar
  • 2 tsp Ground cinnamon

Directions

Step 1

Warm the almond milk in a small saucepan over low heat until touch-warm, not hot. Remove from heat and whisk in 1 tablespoon of the sugar. Sprinkle the yeast on top, cover with a tea towel, and set aside for about 10 minutes, until frothy.

Step 2

In a small bowl, melt 60g of the vegan butter and let it cool slightly.

Step 3

In a large mixing bowl, whisk together the flour, 1/2 tablespoon of ground cardamom, and salt. Make a well in the center of the flour mixture.

Step 4

Pour the yeast mixture, melted butter, and remaining sugar into the well. Stir until the dough starts to come together, then knead with your hands for about 8-10 minutes until smooth and elastic.

Step 5

Place the dough back in the mixing bowl, cover with a clean towel, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

Step 6

While the dough rises, prepare the filling by stirring together the brown sugar, cinnamon, and remaining 1/2 tablespoon of cardamom. Melt the remaining 15g of vegan butter.

Once the dough has risen, turn it out onto a lightly floured surface and roll it into a rectangle about ½ inch thick.

Brush the rolled-out dough with melted butter and sprinkle evenly with the sugar-cardamom-cinnamon mixture.

Starting from a long side, roll the dough tightly into a log and cut into 12 equal slices.

Place the buns into a lightly greased baking dish or on a parchment paper-lined baking sheet. Cover with a towel and let rise for an additional 30 minutes.

Preheat your oven to 180°C (350°F).

Bake the buns in the preheated oven for 18-20 minutes or until golden brown on top.

Step 13

Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature!
