  • 6 cups vegetable broth
  • 1 cup cooked chickpeas
  • 0.5 cup long-grain rice
  • 1 cup coconut milk
  • 2 bay leaves
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and minced garlic, and sauté for about 5 minutes until the onion becomes translucent.

Step 3

Add the diced carrot, diced celery, and diced zucchini to the pot. Cook for another 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring it to a gentle boil.

Add the cooked chickpeas, long-grain rice, coconut milk, and bay leaves to the pot. Stir to combine.
