  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 avocado, sliced
  • 0.5 cup alfalfa sprouts
  • 1 tomato, sliced
  • 4 vegan burger buns
  • 4 lettuce leaves

Directions

Step 1

In a large mixing bowl, mash the drained and rinsed chickpeas with a fork or potato masher until they are mostly smashed with some larger pieces left for texture.

Add the breadcrumbs, finely chopped red onion, minced garlic, ground cumin, ground coriander, lemon juice, chopped fresh cilantro, 1 tablespoon olive oil, salt, and black pepper to the mashed chickpeas. Mix until well-combined.
