  • 250 grams vegan pasta
  • 3 tablespoons vegan butter
  • 2 cloves garlic cloves

  • 2 tablespoons fresh parsley
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 4 liters water

Directions

Step 1

Fill a large pot with 4 liters of water and add a pinch of salt. Bring to a rolling boil over high heat.

Step 2

Add the vegan pasta to the boiling water and cook according to the package instructions until al dente. This typically takes around 8-10 minutes.

Step 3

While the pasta is cooking, peel and finely mince the garlic cloves.

Step 4

In a separate large pan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant and lightly golden, but not browned.

Once the pasta is cooked, reserve about 1/4 cup of the pasta water and then drain the noodles, returning them to the pot.
