Ingredients

  • 2 cans canned young green jackfruit
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sea salt
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 cup vegan BBQ sauce

Directions

Step 1

Drain and rinse the jackfruit thoroughly to remove the brine.

Step 2

Using your fingers or a fork, pull apart the jackfruit pieces until they resemble pulled pork.

Step 3

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 4

In a large mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, black pepper, and sea salt.

Step 5

Add the jackfruit to the bowl and toss to coat evenly with the spice mixture.

Step 6

Spread the seasoned jackfruit in an even layer on the prepared baking sheet.

Step 7

Bake for 25 minutes to allow the edges to brown and become slightly crispy.

Step 8

In a small bowl, mix together the maple syrup, apple cider vinegar, and vegan BBQ sauce.

Step 9

Remove the baking sheet from the oven, then pour the BBQ sauce mixture over the jackfruit, tossing gently to coat.

Step 10

Return the jackfruit to the oven and bake for another 25 minutes, or until the BBQ sauce caramelizes and forms a sticky glaze on the jackfruit.

Step 11

Once cooked, remove from the oven and let cool slightly. Serve warm with additional BBQ sauce on the side if desired.
