Ingredients

  • 1 pound Broccoli
  • 0.5 cup Raw cashews
  • 0.25 cup Nutritional yeast
  • 1 cup Unsweetened almond milk
  • 2 tablespoons Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 cups Water

Directions

Step 1

Soak the cashews in hot water for 15 minutes. This softening will aid in creating a smooth and creamy sauce.

Step 2

While the cashews are soaking, prepare the broccoli by cutting it into bite-sized florets.

Step 3

Bring 4 cups of water to a boil in a large pot. Add the broccoli florets and cook for 3-4 minutes until they are bright green and tender-crisp.

Step 4

Drain the broccoli immediately and rinse with cold water to stop the cooking process. Set the broccoli aside.

Step 5

Drain the soaked cashews and place them in a high-speed blender. Add the nutritional yeast, almond milk, lemon juice, garlic powder, onion powder, paprika, salt, and black pepper.

Step 6

Blend the mixture on high speed until the sauce is smooth and creamy, about 2-3 minutes. If the sauce is too thick, add a tablespoon of almond milk at a time to reach your desired consistency.

Step 7

Taste the cheese sauce and adjust the seasonings as needed.

Step 8

To serve, place the cooked broccoli on a serving dish and generously drizzle with the vegan cheese sauce. Serve warm.
