  • 4 cups Broccoli florets
  • 1 medium, chopped Carrot
  • 1 medium, peeled and chopped Potato
  • 0.5 cup, raw Cashews
  • 1 cup Vegetable broth
  • 0.5 cup Nutritional yeast
  • 1 tablespoon Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup, unsweetened Almond milk
  • 0.5 cup, vegan Breadcrumbs
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Bring a large pot of water to a boil. Add the broccoli florets and cook for 4-5 minutes until tender-crisp. Drain and set aside.

Step 3

In a medium saucepan, add the chopped carrot, potato, and raw cashews. Cover with water and bring to a boil. Reduce heat to medium-low and simmer for about 10 minutes until the vegetables are tender.

Drain the cashews, carrot, and potato and add them to a blender along with the vegetable broth, nutritional yeast, lemon juice, garlic powder, onion powder, turmeric, salt, black pepper, and almond milk.
