  • 600 grams, florets and stalks chopped broccoli
  • 1 liter vegetable broth
  • 200 milliliters coconut cream
  • 4 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 150 grams vegan blue cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, garlic, and celery to the pot. Sauté for 5 minutes until the onion becomes translucent and fragrant.

Add the chopped broccoli to the pot and cook for another 3 minutes, stirring occasionally.

Pour the vegetable broth into the pot, bring to a boil, and then reduce the heat to a simmer. Cook for 15 minutes or until the broccoli is tender.
