Ingredients

  • 2 cups Rolled oats
  • 1 cup Almond flour
  • 2 tablespoons Ground flaxseed
  • 1 tablespoon Chia seeds
  • 2 large Ripe banana (mashed)
  • 0.33 cup Maple syrup
  • 0.5 cup Almond butter (or any nut/seed butter)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 0.33 cup Dried cranberries or raisins
  • 0.33 cup Dark chocolate chips (vegan)
  • 0.25 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almond flour, ground flaxseed, chia seeds, baking powder, cinnamon, and salt. Stir well to mix the dry ingredients.

Step 3

In a separate bowl, mash the ripe bananas until smooth. Add the maple syrup, almond butter, and vanilla extract. Mix until the wet ingredients are fully combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until a thick dough forms.

Step 5

Fold in the dried cranberries (or raisins), dark chocolate chips, and chopped nuts (if using).

Scoop about 2 tablespoons of dough at a time and form into a round cookie shape. Place each cookie onto the prepared baking sheet, leaving a little space between them as they won’t spread much.
