Start by peeling the potatoes and slicing them into 3-4 mm thick rounds. You can also leave the skin on if using organic potatoes for extra texture and flavor.
Parboil the sliced potatoes in a large pot of salted water for about 5-7 minutes until they are slightly tender but not fully cooked. Drain and let them steam dry in the colander.
While the potatoes are drying, peel and finely chop the onion and garlic cloves. Set aside.
