Ingredients

  • 2 cups Vital wheat gluten
  • 1 tablespoon Nutritional yeast
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1.5 cups Vegetable broth
  • 3 tablespoons Soy sauce
  • 3 tablespoons Olive oil
  • 2 tablespoons Maple syrup
  • 0.5 teaspoon Liquid smoke
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Water
  • 2 sprigs Fresh rosemary

Directions

Step 1

In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, onion powder, garlic powder, paprika, and salt. Mix well.

Step 2

In a separate bowl, whisk together 1 cup of the vegetable broth, 2 tablespoons of soy sauce, and 1 tablespoon of olive oil.

Step 3

Pour the wet ingredients into the dry mixture and stir with a spatula until a dough forms. Knead it briefly with your hands until it's well-combined and elastic, about 3-5 minutes.

Divide the dough into 12 equal pieces and shape each piece into a wing-like form.

In a large pot, bring the water, 1 tablespoon soy sauce, and 1 tablespoon olive oil to a boil. Add the seitan wings, reduce the heat to a simmer, and let them cook for 30 minutes. Remove from heat and set aside, allowing them to cool slightly in the broth.

In the same skillet, add the remaining vegetable broth, maple syrup, remaining soy sauce, liquid smoke, black pepper, and rosemary sprigs. Stir to combine, and bring to a simmer.

Return the seitan wings to the skillet. Cover the pan and let simmer on low heat for 15-20 minutes, spooning the sauce over occasionally, until the sauce reduces and the wings are fully infused with flavor.

Step 9

Remove rosemary sprigs before serving.

Serve the vegan braised chicken wings hot, garnished with additional fresh herbs if desired.
