Peel and dice the medium bottle gourd into small cubes. Set aside.
Heat 2 tablespoons of coconut oil in a large pan over medium heat.
Add 1 teaspoon of mustard seeds and 1 teaspoon of cumin seeds to the hot oil. Allow them to splutter.
Add the chopped large onion to the pan and sauté until it becomes translucent.
Stir in 1 tablespoon of ginger-garlic paste and 2 finely chopped green chilies. Sauté for another minute until the raw smell disappears.
Add 0.5 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and 1 teaspoon of garam masala. Stir well to combine with the onion mixture.
Add the diced bottle gourd cubes to the pan and mix everything together.
Pour in 0.5 cup of water, cover the pan with a lid, and let it cook for around 10-12 minutes or until the bottle gourd is tender.
Once the bottle gourd is cooked, add 1 cup of coconut milk and 1 teaspoon of salt, or to taste. Stir gently to combine all the ingredients.
Allow the curry to simmer for another 5-7 minutes until it slightly thickens.
Adjust seasoning if required and turn off the heat.
