  • 0.5 cup refined coconut oil
  • 0.25 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 2 tablespoons maple syrup
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, allowing the edges to hang over for easy removal later.

In a large bowl, mix together the rolled oats, all-purpose flour, almond flour, brown sugar, baking powder, cinnamon, and salt.

In a separate bowl, melt the coconut oil if it is solid. Then mix in the almond milk and vanilla extract.
