Ingredients

  • 2 cups Fresh blackberries
  • 2 cups Fresh peaches (peeled, pitted, and sliced)

  • 1.25 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 3 tablespoons Coconut sugar (or granulated sugar)
  • 0.5 cups Unsweetened almond milk (or other non-dairy milk)
  • 3 tablespoons Coconut oil (melted)
  • 1 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish and set aside.

Step 2

In a large mixing bowl, combine the blackberries, peach slices, granulated sugar, cornstarch, and lemon juice. Toss gently to coat the fruit evenly. Pour the fruit mixture into the prepared baking dish and set aside.

In another mixing bowl, whisk together the flour, baking powder, salt, and coconut sugar.
