Ingredients

  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 15 ounces cooked black beans, drained and rinsed
  • 1 teaspoon cumin
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • 0.5 teaspoon salt
  • 8 corn tortillas
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup fresh cilantro, chopped
  • 1 cup red cabbage, thinly sliced

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes, stirring occasionally, until the onion becomes translucent.

Stir in the minced garlic and cook for another 1 minute until fragrant.

Add the cooked black beans to the skillet, followed by cumin, smoked paprika, chili powder, and salt. Stir to combine.
