  • 4 Flour tortillas
  • 1 can Black beans
  • 1 Red bell pepper
  • 1 Red onion

  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh cilantro
  • 1 tablespoon Lime juice
  • 1 cup Dairy-free shredded cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Drain and rinse the black beans. Set them aside.

Step 2

Finely dice the red bell pepper and red onion. Mince the garlic cloves.

Step 3

Heat a large skillet over medium heat and add olive oil. Once hot, add the garlic, red bell pepper, and red onion. Sauté for 3-5 minutes until the veggies soften.

Stir in the black beans, cumin, smoked paprika, salt, and black pepper. Cook for another 3 minutes, stirring occasionally.
