Ingredients

  • 10 grams agar agar strands
  • 4 cups vegetable broth
  • 1 cup coconut water
  • 100 grams shiitake mushrooms, thinly sliced
  • 1 inch piece ginger, peeled and sliced
  • 2 tablespoons scallions, finely chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon salt
  • 0.5 teaspoon white pepper
  • 1 teaspoon sugar
  • 2 tablespoons fresh cilantro, chopped (optional garnish)

Directions

Step 1

Rinse the agar agar strands under cold water and soak them in warm water for 10 minutes until softened.

Step 2

While the agar agar strands are soaking, prepare the other ingredients. Thinly slice the shiitake mushrooms and peel and slice the ginger.

Step 3

In a large pot, combine the vegetable broth and coconut water. Add the sliced ginger and bring to a gentle boil over medium heat.

Drain the soaked agar agar strands and cut them into 2-inch lengths. Add the strands to the boiling broth.
