Ingredients

  • 400 g canned chickpeas, drained and rinsed
  • 60 g rolled oats
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 30 g fresh parsley, chopped
  • 15 g fresh mint, chopped
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 50 g breadcrumbs
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

In a large bowl, mash the chickpeas with a potato masher or fork until mostly smooth, leaving some small chunks for texture.

Step 2

Add the rolled oats, finely chopped onion, minced garlic, chopped parsley, chopped mint, dried oregano, ground cumin, ground coriander, ground paprika, soy sauce, olive oil, and breadcrumbs to the mashed chickpeas.

Step 3

Season with salt and black pepper.

Step 4

Mix the ingredients thoroughly until well combined. Adjust seasoning if necessary.

Step 5

Divide the mixture into 8 equal portions and shape them into oval patties, about 1 cm thick.

Step 6

Heat a non-stick skillet over medium heat and lightly coat it with a splash of olive oil.

Step 7

Cook the patties in batches for about 4-5 minutes on each side until golden brown and firm. Avoid overcrowding the skillet.

Step 8

Once cooked, transfer the bifteki to a plate lined with paper towels to absorb any excess oil.

Step 9

Serve the vegan bifteki warm with a side of fresh salad or in a pita wrap with your favorite vegan yogurt sauce.
