Ingredients

  • 500 grams Okra (Bhindi)
  • 3 tablespoons Cooking oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam Masala
  • 1 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh coriander leaves

Directions

Step 1

Wash the okra thoroughly under running water. Pat them dry with a clean kitchen towel to remove all moisture.

Step 2

Cut off the head and tail of each okra and slice them into 1/2-inch pieces.

Step 3

Heat the cooking oil in a large skillet or pan over medium heat.

Step 4

Add the cumin seeds and coriander seeds to the hot oil, and sauté for about 30 seconds or until they begin to sizzle and release their aroma.

Step 5

Add the sliced okra to the pan and stir well to coat them with the oil and seeds.

Step 6

Sprinkle the turmeric powder and salt over the okra, and mix gently to combine.

Step 7

Cook the okra on medium heat, stirring occasionally, until they begin to soften. This should take about 10 to 12 minutes.

Step 8

Once the okra is mostly cooked, add the red chili powder and garam masala. Stir well to incorporate the spices evenly.

Step 9

Increase the heat to medium-high and stir-fry for another 5 minutes to slightly crisp the okra.

Step 10

Squeeze the lemon juice over the cooked okra and toss gently.

Step 11

Remove from heat and transfer to a serving dish.

Step 12

Garnish with freshly chopped coriander leaves before serving.

Step 13

Serve hot with rice or roti for a delightful meal.
