Ingredients

  • 250 grams Besan (chickpea flour)
  • 120 milliliters Coconut oil
  • 150 grams Jaggery
  • 3 tablespoons Almond milk
  • 1 teaspoon Cardamom powder
  • 50 grams Chopped nuts (almonds and cashews)
  • 30 grams Raisins

Directions

Step 1

Heat the coconut oil in a large, non-stick pan over medium heat. Once melted, add the besan (chickpea flour) gradually, stirring continuously to ensure it doesn't form lumps.

Step 2

Roast the besan in the coconut oil, stirring constantly. Cook for about 20 to 25 minutes until the besan turns golden brown and emits a nutty aroma. Make sure to stir continuously to avoid burning.

Step 3

Lower the heat and add the cardamom powder, chopped nuts, and raisins to the roasted besan. Stir for about 2 minutes, allowing the nuts and raisins to toast slightly in the oil.

Step 4

Meanwhile, in a separate small pot, heat the almond milk and jaggery together on low heat until the jaggery is fully dissolved. Do not let it boil.

Gradually add the jaggery-almond milk mixture to the roasted besan, stirring rapidly to combine everything evenly. Continue cooking for an additional 2 to 3 minutes until the mixture thickens.

Step 6

Remove the pan from heat and let the mixture cool slightly. When it's warm enough to handle, take small portions of the mixture and roll them between your palms to form round laddoos.

Step 7

Place the laddoos on a plate lined with parchment paper and let them cool completely. They will firm up as they cool.

Serve immediately or store in an airtight container for up to one week.
