Ingredients

  • 500 grams Potatoes
  • 1 Carrot
  • 100 grams Green peas
  • 1 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 3 tablespoons Chopped fresh coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Chickpea flour
  • 3 tablespoons Water
  • 3 tablespoons Oil

Directions

Step 1

Boil the potatoes in a large pot for about 15 minutes, or until tender. Drain, peel, and mash them in a big bowl.

Step 2

Peel and grate the carrot. Add it to the mashed potatoes along with the green peas.

Step 3

In a small skillet, heat 1 tablespoon of oil over medium heat. Saute the chopped onion and minced garlic until translucent. Add this to the potato mixture.

Step 4

Stir in chopped coriander, ground cumin, ground coriander, salt, and black pepper into the potato mixture. Mix everything until well combined.

Step 5

In a small bowl, mix chickpea flour and water into a smooth batter.

Step 6

Take portions of the potato mixture (about the size of a golf ball) and flatten them into patties.

Step 7

Dip each patty into the chickpea batter, ensuring they are coated evenly.

Step 8

Heat 2 tablespoons of oil in a non-stick pan over medium heat. Fry the patties in batches, about 3-4 minutes on each side, or until golden brown and crispy.

Step 9

Drain the bergedil on paper towels to remove excess oil before serving.

Step 10

Serve the Vegan Bergedil warm, with your choice of dipping sauce or chutney.
