Ingredients

  • 1 medium carrot
  • 1 celery stalk
  • 1 medium yellow onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 2 cups water
  • 1 tablespoon soy sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 stalks green onions
  • 4 small mushrooms
  • 0.5 cup crispy fried onions

Directions

Step 1

Peel and chop the carrot into small chunks. Slice the celery stalk and onion into rough pieces. Peel and smash the garlic cloves.

Step 2

In a large pot, combine the chopped carrot, celery, onion, and garlic. Add the vegetable broth and water, and bring the mixture to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low and let the vegetables simmer for about 15 minutes until they are tender.

Step 4

Remove the pot from heat, then strain the broth through a sieve into another pot or large bowl to remove the vegetables, leaving a clear broth.

Step 5

Return the clear broth to the stove and place over medium heat. Stir in the soy sauce, salt, and pepper, adjusting seasoning to taste.

Step 6

Trim and slice the green onions, and thinly slice the mushrooms.

Step 7

Add the sliced mushrooms to the broth and let them simmer for about 5 minutes until tender.

Step 8

To serve, ladle the hot soup into bowls and garnish with sliced green onions and a generous sprinkle of crispy fried onions on top.

Step 9

Enjoy the Vegan Benihana Onion Soup immediately while it's warm.
