Ingredients

  • 1 cup raw cashews
  • 0.5 cup cucumber, peeled and grated
  • 3 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 2 tablespoons dill pickle juice
  • 2 tablespoons fresh dill, chopped
  • 3 pieces scallions, chopped
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup water

Directions

Step 1

Place the raw cashews in a bowl and cover with water. Let them soak for at least 4 hours, or overnight for best results.

Step 2

Drain and rinse the soaked cashews thoroughly.

Step 3

In a high-speed blender or food processor, combine the soaked cashews, cucumber, nutritional yeast, lemon juice, dill pickle juice, and water. Blend until smooth and creamy.

Step 4

Add in the fresh dill, scallions, garlic powder, onion powder, salt, and black pepper. Blend again until all ingredients are well incorporated.

Step 5

Taste and adjust seasoning if necessary, adding more salt or dill pickle juice to enhance the flavor.

Step 6

Transfer the spread to a bowl and cover. Refrigerate for at least 30 minutes to allow flavors to meld together.

Step 7

Serve the Vegan Benedictine Spread chilled, spread on whole-grain bread, bagels, or crackers, or use as a dip for fresh vegetables.
