Ingredients

  • 1.5 cups unsweetened shredded coconut
  • 0.5 cup raw cashews
  • 0.5 cup coconut milk
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 cup extra unsweetened shredded coconut
  • 12 whole cloves

Directions

Step 1

Begin by soaking the raw cashews in hot water for about 15 minutes to soften them.

Step 2

After soaking, drain the cashews and place them in a food processor. Add the coconut milk, maple syrup, vanilla extract, and salt.

Step 3

Blend everything together until you obtain a smooth, creamy consistency.

Step 4

Transfer the cashew mixture to a non-stick saucepan and cook over medium heat for about 8-10 minutes, stirring continuously. The mixture should thicken as it cooks.

Step 5

Once thickened, remove the saucepan from heat and gently fold in 1.5 cups of unsweetened shredded coconut.

Step 6

Allow the mixture to cool slightly until it is easy to handle.

Step 7

Take small portions of the mixture and roll them into balls, approximately 1 inch in diameter.

Step 8

Roll each ball in the extra half cup of shredded coconut to coat them completely.

Step 9

Place a whole clove on top of each Beijinho ball as a garnish.

Step 10

Refrigerate the Beijinhos for at least 30 minutes before serving to help them firm up.

Step 11

Serve chilled and enjoy these creamy, vegan coconut treats.
