Ingredients

  • 2 medium-sized Beetroot
  • 1.5 cups Vegan yogurt
  • 0.5 cup Cucumber
  • 2 tablespoons Cilantro
  • 1 tablespoon Mint leaves
  • 1 small Green chili
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Black salt
  • 0.25 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 1 teaspoon Olive oil

Directions

Step 1

Peel the beetroot and grate it using a box grater.

Step 2

Peel and finely chop the cucumber. Finely chop the cilantro and mint leaves. De-seed and chop the green chili.

Step 3

In a dry pan, heat the olive oil over medium heat. Add the cumin seeds and sauté until they start to splutter and release their aroma, about 1-2 minutes.

Step 4

In a large mixing bowl, combine the grated beetroot, chopped cucumber, green chili, cilantro, and mint.

Step 5

Add the vegan yogurt to the bowl. Stir well to combine all the ingredients.

Step 6

Season the mixture with black salt, regular salt, and lemon juice. Stir once more to ensure even distribution of the seasonings.

Step 7

Pour the tempered cumin seeds along with the oil into the beetroot-yogurt mixture. Mix well.

Step 8

Cover the bowl and refrigerate the raita for at least 1 hour to let the flavors meld together.
