Ingredients

  • 8 ounces Buckwheat soba noodles
  • 1 cup Vegan beef strips
  • 1 medium, julienned Carrot
  • 2 cups, shredded Green cabbage
  • 1 medium, sliced Red bell pepper
  • 1 cup Sugar snap peas
  • 1 small, thinly sliced Onion
  • 3 cloves, minced Garlic
  • 1 tablespoon, grated Fresh ginger
  • 3 tablespoons Soy sauce (gluten-free if needed)
  • 1 tablespoon Mirin
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 2 stalks, chopped Green onions
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cook buckwheat soba noodles according to package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the vegan beef strips and cook until browned, about 4-5 minutes. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the onions, garlic, and ginger, and sauté for 1-2 minutes until fragrant.
