Ingredients

  • 400 grams Udon noodles
  • 200 grams Plant-based beef strips
  • 3 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 4 cups Vegetable broth
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 stalks Green onions
  • 100 grams Shiitake mushrooms
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • 100 grams Spinach
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Prepare all ingredients: mince the garlic cloves, peel and slice the ginger, thinly slice the shiitake mushrooms, and chop the green onions, separating the green and white parts.

Step 2

In a large pot, heat the sesame oil over medium heat. Add the minced garlic and sliced ginger, sautéing for about 2 minutes until aromatic.

Stir in the white parts of the green onions and shiitake mushrooms, cooking until the mushrooms are soft, around 3-4 minutes.

Add the plant-based beef strips and cook for another 3 minutes, stirring occasionally.
