Ingredients

  • 400 g extra-firm tofu
  • 2 tablespoons cornstarch
  • 0.5 cup soy sauce (low sodium)
  • 0.25 cup maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, minced
  • 250 g broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 3 cups cooked jasmine rice
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons vegetable oil
  • 1 cup water
  • 1 tablespoon cornstarch

Directions

Step 1

Drain and press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.

Step 2

In a medium bowl, toss the tofu cubes with 2 tablespoons of cornstarch until evenly coated.

Heat 2 tablespoons of vegetable oil in a large pan over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 10 minutes. Remove the tofu from the pan and set aside.

In a small bowl, whisk together 0.5 cup of soy sauce, 0.25 cup of maple syrup, 1 tablespoon of sesame oil, 1 tablespoon of rice vinegar, minced garlic, and minced ginger to create the teriyaki sauce.
