Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 carrot, julienned
  • 2 cups baby spinach
  • 8 ounces vegan beef strips
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sake
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 2 scallions, chopped
  • 1 tablespoon sesame seeds
  • 2 tablespoons pickled ginger (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Combine the rice with 2 cups of water in a saucepan and bring to a boil.

Step 2

Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes or until water is absorbed and the rice is tender. Remove from heat and let it sit covered for an additional 5 minutes.

Meanwhile, heat olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until the onions are translucent, about 3-4 minutes.
