Ingredients

  • 400 g Vegan beef chunks
  • 3 tbsp Coconut oil
  • 2 medium, finely sliced Onion
  • 4 minced Garlic cloves
  • 1 inch, grated Ginger
  • 2 sliced Green chilies
  • 3 medium, finely chopped Tomatoes
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Turmeric powder
  • 0.5 tsp Red chili powder
  • 1 tsp Garam masala
  • 1 tsp (to taste) Salt
  • 0.5 cup, chopped Cilantro
  • 200 ml Water
  • 1 juice Lemon

Directions

Step 1

Heat the coconut oil in a large pan over medium heat.

Step 2

Add the finely sliced onions and sauté until they become translucent, about 5-7 minutes.

Step 3

Stir in the minced garlic, grated ginger, and sliced green chilies. Sauté for another 2 minutes until fragrant.

Step 4

Add the finely chopped tomatoes and cook, stirring occasionally, until the tomatoes start to break down and become paste-like, about 8-10 minutes.

Step 5

Add the ground cumin, ground coriander, turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the onions and tomatoes with the spices.

Step 6

Add the vegan beef chunks to the pan, stirring to combine them with the spice mixture and ensure they are evenly coated.

Step 7

Pour in the water and bring the mixture to a simmer. Cover the pan and let it cook for about 15 minutes, stirring occasionally.

Step 8

Remove the lid and continue to cook for another 5-7 minutes, allowing the sauce to thicken and the flavors to deepen.

Step 9

Taste and adjust the seasoning, adding more salt if needed.

Step 10

Garnish with chopped cilantro and a squeeze of lemon juice before serving.

Step 11

Serve hot with your choice of rice or vegan naan.
