  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • 0.5 cup water
  • 4 large flour tortillas
  • 0.5 cup, chopped fresh cilantro
  • 1 sliced avocado
  • 0.5 cup salsa

Directions

Step 1

Begin by cooking the brown rice. In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring it to a boil over high heat.

Step 2

Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onions are translucent, about 3-4 minutes.
