Drain and rinse the jackfruit, then pat dry. Shred the pieces with your fingers, removing any seed pods and hard cores.
In a large bowl, mix the jackfruit, soy sauce, brown sugar, hoisin sauce, rice vinegar, smoked paprika, garlic powder, and onion powder until well combined.
Heat the sesame oil in a skillet over medium heat. Add the jackfruit mixture and sauté for about 10 minutes or until the jackfruit begins to caramelize and take on a deeper color. Remove from heat and set aside.
