Ingredients

  • 300 grams firm tofu
  • 2 sheets nori sheets
  • 50 grams tapioca starch
  • 75 grams all-purpose flour
  • 1 teaspoon baking powder
  • 3 cloves garlic cloves
  • 2 shallots shallots
  • 2 tablespoons soy sauce
  • 0.5 teaspoon ground white pepper
  • 1 teaspoon salt
  • 500 milliliters oil for frying
  • 50 grams kale
  • 200 grams peanut sauce

Directions

Step 1

Drain the tofu and pat it dry with a clean kitchen towel. Crumble it into a large mixing bowl until it achieves a ricotta-like texture.

Step 2

Finely chop the nori sheets and add them to the bowl with the tofu. This will add a subtle sea-like flavor reminiscent of fish.

Step 3

Add the tapioca starch, all-purpose flour, and baking powder to the tofu mixture. Mix well until combined.

Step 4

Mince the garlic cloves and shallots finely, and stir them into the tofu mixture along with soy sauce, ground white pepper, and salt. Mix everything thoroughly.

Step 5

Chop kale into fine pieces and gently fold into the dumpling mixture.

Step 6

Shape the mixture into small dumplings, roughly the size of a golf ball.

Step 7

Heat oil in a deep frying pan or a pot over medium heat. Once hot, carefully add the dumplings, a few at a time, and fry until they are golden brown and crispy. This should take about 4-5 minutes per batch.

Step 8

Remove the fried dumplings with a slotted spoon and drain them on a plate lined with paper towels.

Step 9

Serve the vegan batagor warm, accompanied by peanut sauce for dipping.
