Ingredients

  • 1 cup Rice flour
  • 1 cup Tapioca starch
  • 2.5 cups Water
  • 0.5 teaspoon Salt
  • 2 tablespoons Olive oil
  • 1 cup Firm tofu, crumbled
  • 1 cup Button mushrooms, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sugar
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup Fried shallots
  • 0.5 cup Fresh cilantro, chopped
  • 0.5 cup Mint leaves

Directions

Step 1

In a medium mixing bowl, combine rice flour, tapioca starch, water, and salt. Stir until smooth and let it rest for 30 minutes.

Step 2

Heat 1 tablespoon of olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.

Step 3

Add chopped mushrooms and crumbled tofu to the pan. Stir in soy sauce, sugar, and black pepper. Cook for 5 minutes until the mixture is well-combined and heated through. Set aside.

Step 4

Prepare a steamer by bringing water to a boil. Lightly oil a shallow plate or tray that fits inside the steamer.

Step 5

Stir the rice flour batter again. Pour a thin layer of the batter onto the oiled tray, just enough to cover the surface.

Step 6

Place the tray in the steamer, cover, and steam for 3-4 minutes until the rice sheet is translucent and set.

Step 7

Carefully remove the tray from the steamer. Use a spatula to lift the rice sheet and transfer it to a work surface.

Step 8

Spoon some of the mushroom-tofu filling along one edge of the rice sheet. Gently roll the sheet around the filling to form a thin roll.

Step 9

Repeat the steaming and rolling process with the remaining batter and filling.

Step 10

Once all rolls are made, slice them into bite-sized pieces and arrange them on a serving platter.

Step 11

Garnish with fried shallots, fresh cilantro, and mint leaves before serving.

Step 12

Serve with extra soy sauce or a light dipping sauce on the side.
