Ingredients

  • 3 cups all-purpose flour
  • 0.25 cup sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon baking powder
  • 1 cup unsweetened almond milk
  • 2 tablespoons vegetable oil
  • 7 ounces medium firm tofu
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves minced garlic
  • 0.5 cup grated carrot
  • 0.5 cup diced mushrooms
  • 2 tablespoons green onions, chopped
  • 0.25 teaspoon pepper
  • 0.25 teaspoon salt
  • 0.25 cup water

Directions

Step 1

In a large bowl, mix the flour, sugar, yeast, and baking powder.

Step 2

Warm the almond milk slightly and mix it with vegetable oil.

Step 3

Gradually add the almond milk mixture to the dry ingredients, stirring until a dough forms.

Step 4

Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.

Step 5

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rest in a warm place for 1 hour or until doubled in size.

Step 6

While the dough is rising, prepare the filling. Drain and press the tofu to remove excess water.

Step 7

Crumble the tofu into small pieces and add soy sauce, sesame oil, and minced garlic in a bowl. Mix well.

Step 8

In a pan over medium heat, sauté the tofu mixture for about 5 minutes.

Step 9

Add grated carrot, diced mushrooms, and green onions to the pan. Stir to combine and cook for another 5-7 minutes. Season with pepper and salt.

Step 10

Remove filling from heat and let it cool.

Step 11

Once the dough has doubled, punch it down and divide it into 12 equal pieces.

Step 12

Flatten each piece into a circle about 3 inches in diameter.

Step 13

Place about 1-2 tablespoons of the tofu filling in the center of each dough circle.

Step 14

Pinch the edges of the dough to seal, forming a bun shape.

Step 15

Place each bun on a small square of parchment paper.

Step 16

Arrange the buns in a steamer, leaving space between them to expand.

Step 17

Steam the buns over boiling water for about 15-20 minutes until the dough is cooked through and fluffy.

Step 18

Serve warm and enjoy your Vegan Banh Bao!
