Ingredients

  • 4 pieces vegan sausages
  • 800 grams potatoes
  • 4 tablespoons vegan butter
  • 120 milliliters unsweetened almond milk
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 2 cloves garlic cloves
  • 2 tablespoons all-purpose flour
  • 480 milliliters vegetable broth
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh thyme
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel and cut the potatoes into small chunks. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes or until the potatoes are tender when pierced with a fork.

Step 2

While the potatoes are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the vegan sausages and cook them for about 10-12 minutes or until browned and heated through, turning occasionally. Remove from the pan and set aside.
