Peel the ripe saba bananas and slice them in half lengthwise.
Place a banana slice on a spring roll wrapper with the cut side facing up.
Sprinkle about 1 tablespoon of brown sugar evenly over the banana slice.
Fold the bottom side of the spring roll over the banana. Fold in the sides, and then roll it upwards tightly to enclose the banana completely.
Dab a little water on the edge of the spring roll wrapper to help seal the roll.
Repeat the process with the remaining bananas and spring roll wrappers.
Heat coconut oil in a deep skillet or pan over medium heat.
Once the oil is hot, carefully add the banana turons and fry for about 2-3 minutes on each side or until they are golden brown and crispy.
Remove the turons using a slotted spoon and drain on a plate lined with paper towels to remove excess oil.
Allow to cool slightly before serving. Enjoy them warm and crunchy!
